200g self-raising flour
(or plain flour with a teaspoon of baking powder)
100g caster sugar
75ml (3 fl.oz) milk
pinch of salt
sieve the flour, baking poweder, and salt. Rub in marg. and add remaining dry ingredients. Beat the egg and add milk and egg to dry ingredients. Beat well. Put into 16cm tin lined with one thickness of greasproof paper and bake at 350ºF for 1 1/4 h.
(I tend to bake at 350º for more or less 1/2 and hour, till top slightly browning and then turn down to 325º or 300º to cook more slowly for the rest of the time.)
